Preheat oven to 300F. Line a 9x13 baking pan/sheet with a peice of parchment paper.
Add oats, pecans, cocoa powder, shredded coconut, chia seeds and sea salt to a medium bowl. Mix well.
In a small bowl whisk together melted coconut oil, maple syrup and vanilla extract.
Pour the wet ingredients over the dry ingredients and mix until fully incorporated.
Poor the granola mixture out onto the prepared baking pan and spread out in a thin, even layer. Bake for a total of 35 minutes stirring half way through. Remove pan from the overn and allow to cool completely.
Store granola in an airtight container until ready to use.
