Add the water and granualted sugar to a small saucepan and bring the mixture to a simmer. Continue simmering, being sure to stir occasionally, until the sugar has completely dissolved. Allow the mixture to cool before adding the fresh lemon juice. Stir to combine. Transfer the simple syrup to a container and store in the refrigerator until ready to use.
Notes
This recipe calls for 1 1/2 cups fresh lemon juice, which is the juice from approximately 7 to 8 lemons.
Depending on the recipe you'll be using this simple syrup in you may want to strain the lemon juice to remove any pulp. I find that if you're using it in drinks it doesn't make much difference.
