Chocolate Granola

Crunchy chocolate granola with pecans and shredded coconut.

Ingredients
  

  • 2 cups rolled oats
  • 2/3 cup chopped pecans
  • 1/3 cup cocoa powder
  • 1/4 cup unsweetened shredded coconut
  • 1 tbsp chia seeds
  • 1/2 tsp fine sea salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 300F. Line a 9x13 baking pan/sheet with a peice of parchment paper.
  • Add oats, pecans, cocoa powder, shredded coconut, chia seeds and sea salt to a medium bowl. Mix well.
  • In a small bowl whisk together melted coconut oil, maple syrup and vanilla extract.
  • Pour the wet ingredients over the dry ingredients and mix until fully incorporated.
  • Poor the granola mixture out onto the prepared baking pan and spread out in a thin, even layer. Bake for a total of 35 minutes stirring half way through. Remove pan from the overn and allow to cool completely.
  • Store granola in an airtight container until ready to use.
